Cajun comfort: Cajun food carries many stereotypes: that it is hot and spicy, most of it is blackened, and all the food in Louisiana is made by Emeril himself. While the food is distinct, it isn't for these reasons, and the Cajun House adeptly proves the stereotypes wrong.
